Holiday Pumpkin Cheesecake Recipe

Plan for 72 minutes (less than an hour and a half).
Take 20 minutes for prep. time,
Bake crust for 7 minutes, and
Cheesecake cook time of 45 minutes.
Pre-heat the oven to 350 degrees.
Graham cracker crust with toasted ground clove,
4 ounces of unsalted soft butter, and
a half-cup of granulated sugar or sugar substitute.
Use vagelene non-stick spray.
One pound of softened cream cheese
¼ cup of sour cream or crème fraiche
¾ cup of granulated sugar or sugar substitute
10 ounces of roasted pumpkin puree
1 ¼ tsp. toasted cinnamon powder
½ tsp. ground nutmeg
1 tsp. fresh grated ginger
¼ tsp. Kosher sea salt
1 tsp. vanilla extract
3 large eggs
